- Peel as many potatoes + 3 as you are feeding.
- Cut the potatoes into big chunks and boil in a pot of water until soft.
- Drain potatoes and return to the pot.
- Pour milk over the potatoes in the pot until potatoes are covered.
- Add onions and salt and pepper to taste, 1 can of chedder cheese soup
- Bring to boil while stirring often. Let boil for about 5 mins than take it down to simmer for 20 mins or so.
- For a smoother soup mash the potatoes.
the great thing about this soup is you can add whatever you like and it just improves it. I have added carrots, scallops, broccli, cauliflower, dumplings. I've even seen people add sausage. Put it in a bread bowl (yummmm). So have fun with it. I have been making this soup since I was 10 years old. Sorry I don't have exact measurements. Call me if you have questions.
