Stock
1 whole chicken + 6 wings
3 carrots
1 onion
2 leeks
4 celery stalks
3 parsnips
1 bay leaf
1/2 bunch parsley
1 whole lemon
Bring to a boil, reduce heat and simmer. Skim off scum. Strain and discard solids except for chicken.
Soup
In large pot heat olive oil. Add onions carrots and celery.
2 T olive oil
1 lg onion, chopped
3 carrots
2 celery stalks - 1/4" slices
Add stock (6 c)
Cook 25 min until vegetables are tender.
Add shredded chicken with 2 T dill, 1# egg noodles, cook 8-10 min
Season with salt and pepper
